Asian Cooking Ingredients



There are several basic cooking ingredients that your kitchen must have for Asian Home Style cooking:

  • Oyster Sauce – A rich sauce made from boiled oysters and seasonings, order oyster sauce does not have a fishy taste at all (boiling the oysters takes care of that). This rich sauce with a savory flavor is used in meat, viagra sale seafood and vegetable dishes, advice and is an important ingredient in Asian cooking. There are a variety of Oyster sauce brands in Asian grocery stores.  For vegetarians, you can find vegetarian brands that use mushrooms as a substitute.  Oyster sauce is normally sold in bottles, but is sometimes sold in cans. Be sure to refrigerate bottled oyster sauce after opening.  Regular Oyster Sauce Brands: Hop Sing Lung, Lee Kum Kee.  Vegetarian Oyster Sauce: Lee Kum Kee.
  • Sesame Oil – Sesame Oil has high proportion (41%) of polyunsaturated (Omega-6) fatty acids.   This amber colored, aromatic oil, made from pressed and toasted sesame seeds, is a popular ingredient in Asian cooking. Please do NOT use it as a cooking oil because it burns quite easily. Instead, sesame oil is normally added as a flavoring agent in the final stages of cooking.  The Chinese use sesame oil in the preparation of meals for women during postpartum confinement.  Brands: Kadoya sesame oil from Japan and Wei Chuan from Taiwan.
  • Soy Sauce – Soy sauce was invented by the Chinese approximately 3,000 years ago,   soy sauce  is made from fermented soy beans, wheat flour, water, and salt.  The two main types of   soy sauce  are light and dark.  As the name implies, light   soy sauce  is lighter in color, and also more sweet than dark   soy sauce.  In Chinese cooking, it is used more often than dark soy – always use light soy in a recipe unless dark is specifically called for. Aged for a longer period of time, dark   soy sauce  is thicker and blacker in color.  It is also less salty than light soy. It is used in certain recipes to add color, and as a dipping sauce.   There are many brands of soy sauce, I used Kimlan Soy Sauce (Imported) Brand to make dipping sauce and stir fry.  For dark soy sauce, I use the Pearl River Bridge Mushroom Flavored Dark Soy Sauce.  Kikkoman from Japan is another brand that is very common in stores. Storage: Store   soy sauce at room temperature.
  • Hoisin Sauce – Mandarin-style Hoisin sauce ingredients include starches such as sweet potato, wheat or rice, and water, sugar, soybeans, white distilled vinegar, salt, garlic, red chili peppers, and sometimes preservatives or coloring agents. Traditionally, Hoisin sauce is made using sweet potato. Despite the literal meaning of “seafood”, Hoisin sauce does not contain fish.Hoisin is a great glaze for meat and fish. A little dab of hoisin sauce also gives extra flavor to stir-fry and noodle dishes.  Hoisin sauce is made from soybean paste, garlic, chilies, and various spices, and can contain sugar and vinegar.
